The grapes
La Cantina San Donaci uses only grapes from its own vineyards to make its wines: in addition to the three historical grape varieties Negroamaro and Primitivo, small quantities of other varieties are used like Malvasia Nera, Malvasia Bianca, Chardonnay, Bombino, Trebbiano, ecc.
Negroamaro is considered the most important vine variety due to its tannin content and pigments. Of unknown origin, this vine has been widespread in Ionian area for many years. According to some, the name is derived from the dialect term niuru maru that defines the bitter taste of its wine. Abundant and consistent production. Prefers calcareous-clayey soil; suited for warm and dry climate. The wine from these grapes is bright garnet-red color,round flavor, bitter, dry.
Primitivo is one of the most important typical vines of Salento. High-quality production, but in inconsistent amounts. As a single variety, the vine produces a superior-quality, deep ruby red to purplish-red wine, with a high alcohol content, warm, full, well-balanced, persistent, well-structured, thanks to the presence of noble tannin well-combined with the body.
Malvasia Nera has been widespread in Salento area and this vine is now grown together with Negroamaro. Its grapes are mostly used in blends with Negroamaro, adding the proper alcohol content, sapidity and more body. The obtained table wine is fine, alcoholic, deep ruby red; pleasant bouquet, well-balanced and mellow taste.
